Born in Marhamchurch, Cornwall, 1817.

Died in New Plymouth, 16th September, 1883.

Variant spelling, Elliot.

Elliot was the first to establish a dairy farm in New Plymouth, which supplied the town with fresh milk and butter.

He represented the Grey and Bell district on the Provincial Council and was a member of the Executive Council for two years.Elliot was in sole charge of the Commissariat Transport Department during the Taranaki Land Wars.

Peter and his wife Ann had eight children - Samuel, Isaac, John, Thomas, William, Mary & Elizabeth.
